I love the Auckland Italian cultural group “Italiani agli Antipodi”. Once a month, Paolo and Cristina host an Italian cooking lesson which is easy but special, and always delicious!
The latest meetup was fresh egg pasta made into ravioli with two fillings and sauces. One was shrimp with a simple creamy tomato sauce, and the other was spinach and ricotta with sage-infused melted butter. The ricotta was home-made of course. Mmmm, divine!
The ravioli was fun to make as a group – especially as it takes a while in inexperienced hands. It’s a great activity to do as a group of friends who want to learn how to make pasta.
The pasta itself was really quick to make – as Paolo pointed out, you don’t need to ever buy it. Rolling and cutting takes a wee bit longer. Probably good to start your pasta-making experiments with tagliatelle or something simple!
