You just can’t beat a great sandwich! Here’s your sandwich inspiration for today…
Rocket, hummus and portobello mushroom on crusty white baguette
- Wipe and slice the portobello mushrooms.
- Slowly sauté them with a little olive oil and sprinkle your favourite herbs to have with mushrooms – I like rosemary.
- Slice the baguette and slather it with hummus (I make my own hummus with canned chickpeas, fresh garlic, olive oil, lemon juice and tahini in a blender – tastes so much better than the bought stuff!).
- Pile the sarnie high with mushrooms and rocket. Season with salt and pepper to taste.
