Smoothies. Always yum, yet so much more pretty when they’re a great colour too! Today’s fruits were green kiwifruit and pineapple, so I was in the yellow-green spectrum.
Kiwifruit and pineapple both have strong, sweet flavours, so I was looking for something mild and healthy to add to my smoothie. Zucchini! Perfect!
And it was. I blended everything with some ice and a little apple juice to get the right consistency. This doesn’t taste like vegetable juice at all – the zucchini blends right in. (I removed some peel first, as that’s the stronger tasting part of the zucchini.)
So delicious on a hot day like today. And guilt-free too. 🙂
