Grated zucchini salad
Did you know that you can eat zucchini raw? And that all you need is a grater and some balsamic vinegar to make a 5 minute scrumptious salad?
- Grate the zucchini.
- Salt, wait a couple of minutes, squeeze out excess liquid.
- Dress with balsamic vinegar.
And that’s it!
You can also mix it up with other veggies – you can see in the photo I’ve mixed in cubed tomato and chilli sauce for a real detox wake-up call!
