A ligher option – zucchini salad

Between the overeating at Christmas and the heavy drinking of New Year’s Eve? Here’s a recipe to ease the belly strain!

Grated zucchini salad

Did you know that you can eat zucchini raw? And that all you need is a grater and some balsamic vinegar to make a 5 minute scrumptious salad?

  1. Grate the zucchini.
  2. Salt, wait a couple of minutes, squeeze out excess liquid.
  3. Dress with balsamic vinegar.

And that’s it!

You can also mix it up with other veggies – you can see in the photo I’ve mixed in cubed tomato and chilli sauce for a real detox wake-up call!
