Few foods have the oomph to fight the Monday blues like a bad-ass curry.

This Monday called for special powers. And cauliflower. Luckily I had just the trick.

My Monday night curries rarely involve anything complicated. Thank goodness for curry paste when you just need a feed. I love the fact that Mae Ploy’s paste has a bunch of ingredients with names I can recognise. Or, if I don’t, it’s for all the right reasons. (Galangal, anyone?)

Vegetarians be warned – the red and green Mae Ploy mixes have something fishy about them.

Appropriately for a yellow Thai curry, my yellow zucchini plant produced a perfect yellow zucchini just in time. What a cool colour!
