This was just what I needed as an easy midweek meal – and comforting pick me up.
I boiled the potatoes with skin on, mashed them with my hand mixer, then added raw grated zucchini and salt. The zucchini softens a little in the hot potato, but keeps some texture too, which works really well here. You could add butter, cream or oil as you prefer, depending on diet and taste.
This is reminiscent of Bubble & Squeak, but probably a little healthier!
