Stevia Marmalade on toast

My Stevia marmalade experiment went on toast this morning, so here are some results…

Appearance Marmitey, with speckles (i.e. not ideal!).
Did it set? Yes, it set well.
Consistency Good, jam-like, spreads well.
Flavour Upfront it’s quite close to regular marmalade, but with a bit of tanginess akin to damson jam. There’s a sweet aftertaste which is different to the normal aftertaste of marmalade.
Keep or back to the drawing board? We’re not there yet – back to the drawing board.
Score 6 out of 10.
