This lo-carb recipe comes from my friend Simone Johnson, who is a healthy living / fitness fanatic. She has tonnes of great recipes for people looking to improve their body tone.
IngredientsA head of cauliflower Salt Powdered rosemary – or other seasoning of your choice (e.g. parsley is great) Optional – butter / olive oil
- Boil or steam cauliflower until well done – 5-10 minutes.
- Add other ingredients and blend with stick blender or food processor.
- Check seasoning and serve immediately!
This tastes very similar to mashed potato but is slightly more moist. It’s great for people looking for a lower-carbohydrate alternative to mashed potato. We enjoyed it in a traditional dinner with lightly cooked silverbeet in a little butter, and roast chicken thighs.
