Cauliflower Mash

Cauliflower mash with rosemary

This lo-carb recipe comes from my friend Simone Johnson, who is a healthy living / fitness fanatic. She has tonnes of great recipes for people looking to improve their body tone.

Ingredients

A head of cauliflower
Salt 
Powdered rosemary – or other seasoning of your choice (e.g. parsley is great)
Optional – butter / olive oil
  1. Boil or steam cauliflower until well done – 5-10 minutes.
  2. Add other ingredients and blend with stick blender or food processor.
  3. Check seasoning and serve immediately!

This tastes very similar to mashed potato but is slightly more moist. It’s great for people looking for a lower-carbohydrate alternative to mashed potato. We enjoyed it in a traditional dinner with lightly cooked silverbeet in a little butter, and roast chicken thighs.
