Chickpea & kumara patties with yoghurt sauce

Chickpea Wraps

Who needs soggy sandwiches when you can make great wraps at home? I experimented with something between falafel and sweet potato burgers for a change. Quick to make and yum!

Ingredients – patties

can of chickpeas
1 medium sweet potato / kumara – grated
spring onions – chopped
bunch fresh oregano
cumin
flour
salt to taste
olive oil
  1. Blend ingredients in food processor. Use enough flour for a consistency which isn’t too wet or dry.
  2. Heat oil and fry flattened spoonfuls of mixture on both sides.

Ingredients – yoghurt sauce

small pot yoghurt
couple of spoonfuls of tahini
bunch of parsley
salt to taste
  1. Chop parsley finely.
  2. Mix all ingredients well.

Serve with salad and pitas or wraps for a yummy lunch or supper.
